I’ve been tinkering with a dry rub for grilled fish for a while now, and I think I finally nailed it with this lemon herb blend. It works perfectly with firm white fish like tilapia, snapper, cod, halibut, and haddock.

While I love using this seasoning for fish on the grill, it’s also fantastic for pan searing, baking, or air frying.
One of my favorite ways to use it is brushing the fish with a little Dijon mustard before applying the seasoning, just like I do in my grilled tilapia recipe. The mustard helps the seasoning stick and adds another layer of flavor.
Finish the fish with a squeeze of fresh lemon and you’ve got a simple meal that tastes anything but basic.
What Makes This Fish Seasoning Work
Fish doesn’t need a lot of heavy seasoning, but the right balance of citrus, herbs, and savory spices can make a big difference. This fish seasoning keeps things simple while adding bright flavor that works especially well with mild white fish.
Lemon Pepper Lemon pepper is the star of this seasoning. The citrus flavor naturally complements fish and gives the seasoning a fresh, bright taste that works perfectly for grilled or pan-seared fish.
Paprika Paprika adds color and a mild sweetness that helps round out the seasoning without overpowering the fish.
Garlic Powder Garlic provides the savory backbone of the seasoning and pairs especially well with grilled fish.
Dried Herbs A small amount of dried herbs adds a subtle freshness that ties everything together and gives the seasoning its lemon herb character.
The result is a simple seasoning blend that enhances the natural flavor of fish without covering it up.
