Grilled Boneless Skinless Chicken Thighs

Boneless skinless chicken thighs are one of the easiest things to grill…and one of the easiest to overcook.

Cook them entirely over direct heat and they dry out fast. Cook them too cautiously and you never develop real texture.

The fix is simple: two-zone grilling and this recipe.

Why Two-Zone Grilling Works

Two-zone grilling gives you control. Start over direct heat for color and texture, then move to indirect heat to finish gently. This prevents flare-ups and keeps the meat juicy.

Seasoning the Chicken Thighs

I keep the seasoning simple and repeatable.

Each thigh gets:

That combo gives you salt, garlic, and savory flavor up front, with a little extra depth from the rub. You don’t need a marinade here… the thighs have plenty of natural flavor on their own.

Cooking Tips

Don’t camp over direct heat.
Boneless thighs cook fast. A few minutes per side is enough to build color before moving them to indirect heat.

Use temperature as your guide.
Dark meat benefits from a slightly higher finish. Pull the thighs around 175–185°F for the best texture.

Control flare-ups immediately.
If fat hits the coals and flames spike, slide the thighs to the indirect zone. That’s the advantage of two-zone grilling.

Adding smoke is goodwith caution.
A little goes a long way. Depending on your grill or smoker, a small amount of hickory, apple, or pecan wood is perfect. Too much can be overpowering.

Optional: Add a light vinegar spritz for brightness.
If you like a little tang, a quick spritz of white vinegar a few times while cooking can add subtle brightness and balance the richness of the thighs. This is optional, but when I really want to impress my guests, it’s a secret weapon.

Let them rest briefly.
Five minutes off the grill helps the juices settle before slicing or serving.


FAQ

Can I use bone-in chicken thighs?

I do love bone-in thighs with skin, but cooking skin-on chicken properly is very particular and turns this into a different recipe entirely. Stick with boneless skinless thighs for this one.

Can I use chicken breasts instead?

While I prefer the flavor and texture of thighs, you can absolutely use boneless chicken breasts. Just know that breasts dry out much faster if they’re overcooked, so an instant-read thermometer becomes even more important. Breasts should be cooked to 165 ºF.

My Final Thoughts

This is one of those recipes that’s hard to mess up and easy to repeat, which is exactly why it’s been in my regular rotation for years. Simple seasoning, smart grill setup, and good heat control go a long way.

Description

These grilled boneless skinless chicken thighs are juicy, flavorful, and easy to repeat. Using simple seasoning and a two-zone grilling method gives you great color up front, then gentle heat to finish without drying them out. This is a reliable weeknight recipe that works on any grill.

Ingredients

  • 2 pounds boneless, skinless chicken thighs (about 8 thighs)
  • 1 tablespoon Goya Adobo seasoning
  • 23 tablespoons BBQ dry rub (see notes)
  • white vinegar (optional, for spritzing)

Instructions

  1. Preheat the grill.
    Set up your grill for two-zone cooking and preheat to high heat. For a charcoal kettle, bank the coals to one side to create a clear direct and indirect zone. Cook with the lid closed.

  2. Season the chicken.
    Coat the thighs evenly with Goya adobo seasoning followed by BBQ rub.

  3. Sear over direct heat.
    Place the thighs over direct heat and cook for 1–2 minutes per side to begin developing color.

  4. Build color and texture.
    Continue cooking over direct heat, flipping and moving as needed, until both sides have good browning and light caramelization (about 6–8 minutes total over direct heat).

  5. Finish over indirect heat.
    Move the thighs to the indirect zone. Close the lid and continue cooking until the internal temperature reaches 175–185°F.

  6. Rest and serve.
    Remove from the grill and let rest for 5 minutes before serving.

Notes

Dry Rub:
For this recipe, I use my All-Purpose BBQ Rub. It’s balanced, not overly sweet, and works especially well on chicken. You can find the full recipe here.

Vinegar Spritz (Optional):
A light spritz of vinegar 4-5 times throughout the cook can add subtle tang and balance the richness of the chicken. It’s a flavor choice, not a requirement.
